Lazy Chicken Quesadilla Triangles

When dinner needs to happen in 10 minutes and everyone is already “so hungry they might faint,” these lazy chicken quesadilla triangles save the day. Crispy on the outside, melty on the inside, and made with whatever chicken you’ve got on hand. It’s basically the shortcut version of a restaurant quesadilla—minus the effort and cleanup.

Ingredients
  

  • 2 large flour tortillas
  • 1–1½ cups cooked shredded or chopped chicken
  • 1–1½ cups shredded cheese cheddar, Monterey Jack, or a blend
  • 2-3 tbsp cream cheese or sour cream optional, makes it extra creamy
  • 1 tbsp butter or oil for the pan
  • Optional add-ins: taco seasoning salsa, diced peppers, or green onions

Method
 

  1. Lay one tortilla flat on a plate or cutting board. Sprinkle a layer of cheese evenly over the tortilla. Add shredded chicken on top of the cheese. Sprinkle a little more cheese over the chicken (this helps everything stick together).
  2. Place the second tortilla directly on top and press it down gently with your hands.
  3. Heat a skillet over medium heat and melt a little (1-2 tbsp) butter or oil.
  4. Carefully place the quesadilla in the pan. Cook 2–4 minutes per side until golden brown and crispy and the cheese is fully melted. Press lightly with a spatula so everything sticks together nicely.
  5. Let it sit for about 1 minute so the cheese doesn’t explode everywhere.
  6. Cut into 6–8 triangles like a pizza.

Notes

Serve with beans, rice, shredded lettuce, diced tomatoes, guacamole, or ranch (sounds odd, but if your kid is a dipper, trust me—ranch is the move here).
