Creamy Hidden Spinach Pasta

This is one of those “you do NOT taste the spinach, I swear” sauces. It’s creamy, cozy, kid-friendly, and perfect for those nights where you just need dinner to feel easy.

This creamy spinach pasta is the kind of dinner that tastes like comfort food from a restaurant, but secretly has a full serving of greens blended right into the sauce. It’s rich, cozy, and picky-eater approved—no “green bits” in sight. Perfect for those nights when you need dinner to feel easy and feel like you tried.

Why This Works

  • Spinach gets fully blended → no texture complaints
  • One pan sauce = fewer dishes to clean
  • Parmesan + garlic = “this tastes like restaurant pasta” vibes
  • Leftovers reheat creamy instead of drying out
  • Easy to sneak in protein without changing the flavor

Type C Mom Hack

Skip the chopping stress and use frozen spinach straight from the bag—just thaw, squeeze, and toss it in. If the day is extra chaotic, blend the sauce right in a blender cup and pour it back into the pan (one less dish to wash later). Bonus: make a double batch and freeze half before adding pasta for an instant future dinner win.

Prep Time 10 minutes
Cook Time 25 minutes

Course: Main Course
Cuisine: Italian

Ingredients

  • 12 oz pasta penne, rotini, or fettuccine pasta
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 2 tbsp flour
  • 2 cups milk whole milk works best, but any works
  • 1/2 cup grated parmesan cheese
  • 3-4 cups fresh baby spinach or 1 frozen box, thawed + squeezed dry
  • 1/2 tsp salt plus more for pasta water
  • 1/4 tsp black pepper
  • 1/4 tsp onion powder optional but helps “depth”
  • Optional protein add-ins: shredded rotisserie chicken ground turkey, or sausage

Method

  1. Cook the pasta: Boil pasta in salted water until al dente. Drain and set aside, saving 1/2 cup pasta water.
  2. Start the base sauce: In a large pan, melt butter over medium heat. Add garlic and cook 30–60 seconds until fragrant (don’t let it brown).
  3. Stir in flour and whisk constantly for about 1 minute. It’ll look like a paste—that’s perfect.
  4. Slowly pour in milk while whisking. Keep stirring until it thickens slightly (about 3–5 minutes).
  5. Add spinach and let it wilt completely. If using frozen, just warm it through.
  6. Then blend the sauce (immersion blender or regular blender) until totally smooth and green.
  7. Return sauce to pan. Stir in parmesan, salt, pepper, and onion powder. Add a splash of pasta water if it feels too thick.
  8. Toss pasta into the sauce and stir until fully coated and creamy.

Need variation?

  • Protein boost: Add shredded rotisserie chicken, browned ground turkey, or Italian sausage.
  • Dairy swap: Use half-and-half or a dairy-free milk + nutritional yeast instead of parmesan.
  • Veggie swap: Add peas, mushrooms, or zucchini for extra texture without changing the flavor.
  • Gluten-free: Use your favorite gluten-free pasta and it works the same way.

Frequently Asked Questions

Can I freeze this?
Yes—freeze the sauce without the pasta for best results, as creamy sauces can separate slightly when thawed. Reheat gently on the stove and whisk in a splash of milk to bring it back to a smooth, creamy texture.

Can I substitute ingredients?
Yes—this recipe is flexible. You can swap spinach for kale, use any milk you have on hand, and replace parmesan with another hard cheese or nutritional yeast.

How long do leftovers last?
Store leftovers in an airtight container in the fridge for up to 3–4 days. Reheat gently with a splash of milk to bring the creaminess back.
