Cheesy Broccoli Pasta Surprise

Broccoli is in there… but nobody needs to know that.

A creamy, cheesy pasta that quietly blends broccoli into the sauce so it feels like comfort food—but still packs in the green stuff.

Why This Works

  • Blending broccoli removes the texture kids usually reject
  • Cheese + butter = flavor camouflage system fully activated
  • Pasta acts as the “safe food anchor” so it still feels familiar
  • One pot-ish sauce keeps cleanup low effort (because life is already loud)

Type C Mom Hack

Cook extra broccoli earlier in the week (or microwave a frozen bag), then blend it with milk and freeze it in a small container or ice cube tray.

Cuisine: American

Ingredients

  • 12 oz pasta shells, elbows, or rotini work best
  • 2 cups broccoli florets fresh or frozen
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk
  • 1 ½ cups shredded cheddar cheese
  • ¼ cup grated parmesan optional but boosts flavor
  • ½ tsp garlic powder
  • Salt + pepper to taste

Method

  1. Cook the pasta according to package directions. Drain and set aside.
  2. Steam or boil broccoli until very soft (about 5–7 minutes). Drain.
  3. Blend the “surprise” sauce: Add broccoli + milk to a blender and blend until smooth and creamy.
  4. In a large pan, melt butter over medium heat. Whisk in flour and cook 1 minute.
  5. Slowly whisk in the broccoli-milk blend until smooth and slightly thickened.
  6. Stir in cheddar, parmesan, garlic powder, salt, and pepper until melty and creamy.
  7. Add cooked pasta and stir until fully coated.
  8. Serve warm and pretend you didn’t just successfully hide a vegetable.

Need variation?

  • Add shredded chicken for extra protein
  • Swap cheddar for mozzarella for a milder flavor
  • Toss in peas or cauliflower for an extra veggie boost
  • Use whole wheat pasta for a subtle fiber upgrade

Frequently Asked Questions

Can I use frozen broccoli?
Yes—just cook it until very soft before blending so the sauce stays smooth.

Will my kids taste the broccoli?
Not likely if it’s fully blended and well-seasoned. The cheese does a lot of the covering.

How long do leftovers last?
Refrigerate for 3-4 days. Add a splash of milk when reheating to bring the sauce back to creamy life.
