Method
- Cook pasta according to package directions. Drain and set aside.
- In the same pot, melt butter over medium heat.
- Whisk in flour and cook for about 1 minute (it should look like a paste).
- Slowly whisk in milk until smooth. Keep stirring until slightly thickened.
- Lower heat and stir in cheddar + mozzarella until melted and creamy.
- Add salt and garlic powder if using.
- Toss in cooked pasta and stir until fully coated.
- Serve warm (and brace for “more please” requests).
Notes
- If it thickens too much later, add a splash of milk when reheating.
- This is mild on purpose—it’s meant for maximum acceptance rate.
- You can add peas, shredded chicken, or broccoli… but only if your audience won’t revolt.
- Leftovers reheat surprisingly well for lunchboxes.
