Ingredients
  

  • 8 oz elbow macaroni classic or small shells work too
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk whole milk = creamiest result
  • 2 cups shredded mild cheddar cheese
  • 1/2 cup shredded mozzarella makes it extra creamy/stretchy
  • 1/2 tsp salt optional for toddlers—go light
  • 1/4 tsp garlic powder optional but helps flavor without “spice”

Method
 

  1. Cook pasta according to package directions. Drain and set aside.
  2. In the same pot, melt butter over medium heat.
  3. Whisk in flour and cook for about 1 minute (it should look like a paste).
  4. Slowly whisk in milk until smooth. Keep stirring until slightly thickened.
  5. Lower heat and stir in cheddar + mozzarella until melted and creamy.
  6. Add salt and garlic powder if using.
  7. Toss in cooked pasta and stir until fully coated.
  8. Serve warm (and brace for “more please” requests).

Notes

  • If it thickens too much later, add a splash of milk when reheating.
  • This is mild on purpose—it’s meant for maximum acceptance rate.
  • You can add peas, shredded chicken, or broccoli… but only if your audience won’t revolt.
  • Leftovers reheat surprisingly well for lunchboxes.

Need variation?

  • Add veggies: 1/2 cup pureed butternut squash, 1/2 pureed cauliflower, of 1/3 cup carrot puree.
  • Add protein: shred a rotisserie and throw that in!
  • Make it creamier by adding roughly 2 oz of cream cheese.
